Add to pasta Ingredients:
19 1/2 oz jennie-o turkey sausages |
1 yellow bell pepper |
1/3 cup shallots |
5 cloves garlic |
1 zucchini |
2 cups squash,summer,scallop |
6 eggs |
4 egg whites |
2 tbsp olive oil |
Directions:
1. broil sausages 2. saute garlic and set aside 3. saute shallots and set aside 4. slice bell pepper 5. slice zucchini in half lengthwise and then slice each piece into four 6. and then chop across. 7. trim scallop squashs and then slice thinly 8. saute squashes and bell pepper in 1 tbsp EVOO, add 1/4 cup white wine and cook until liquid is gone 9. Boil water for pasta 10. combine whole eggs and egg whites and mix then scramble in pan 11. chop up sausages after cooking 12. add sausages to scrambled eggs and then add vegetable mixture 13. add shallots and garlic 14. Cook pasta and then divide among bowls 15. Add sausage,egg,vegetable mix to pasta |
