Pasta With Tuna Tomatoes and Capers |

This is a very easy recipe that you won't believe is really tuna. The capers and tomatoes accent each other perfectly. We made this for the vegetarians, but it was a big hit with everyone. Ingredients:
1 lb vine ripened tomato, diced |
salt |
12 ounces bite size pasta (penne) |
2 (5 ounce) cans tuna packed in oil, not drained |
3 garlic cloves, minced |
1 teaspoon dried oregano |
1/2 cup capers, drained |
4 ounces crumbled feta cheese, plus extra for topping |
1/4 cup fresh basil or 1/4 cup fresh parsley |
Directions:
1. Prepare tomatoes and place in medium bowl. Sprinkle lightly with salt. 2. Meanwhile boil 1 quarts of water with some salt to cook the pasta. Cook partly covered until tender. Drain and then return pasta to pot. 3. Add Tuna (with the oil), garlic, oregano, capers, feta and basil (or parsley) to tomatoes. Toss to coat. 4. Add tomato mixture to pasta. Toss to coat again. 5. Serve with extra feta cheese sprinkled on top. |
