Pasta With Spring Vegetables |

Just love the flavors of this dish. Ingredients:
1 lb. asparagus, trimmed and cut into 1 inch pieces |
1/2 box bow tie pasta |
1/2 lb. sugar snap peas, trimmed |
3 tbls. olive oil |
1/2 cup grated parmesan cheese |
grated parmesan cheese to garnish |
salt and pepper to taste |
Directions:
1. In a large pot of boiling salted water, add asparagus and cook until crisp tender, about 3 minutes 2. Transfer to bowl of ice water with slotted spoon 3. Cool and drain asparagus 4. Add pasta to same pot of boiling water and cook according to package directions. 5. 2 minutes before pasta is done , add snap peas to boiling water 6. Add asparagus to heat through 7. Drain well 8. Return to pot and add olive oil to coat 9. Add 1/2 cup parmesan cheese 10. Season with salt and pepper |
