Ingredients:
20 meatballs |
12 ounce(s) gemelli |
12 ounce(s) mushrooms, quartered |
1 teaspoon(s) thyme |
2 tablespoon(s) butter |
5 ounce(s) baby spinach |
1/2 cup(s) grated pecorino or parmesan |
salt and pepper |
Directions:
1. Cook 20 meatballs from Easy Meatball recipe. Cook 12 oz. gemelli, reserving 1/4 cup of the cooking water. Cook 12 oz. quartered mushrooms and 1 teaspoon chopped thyme in butter in a large skillet until tender, 8-10 minutes. Toss with the pasta, meatballs, baby spinach, cheese and reserved cooking water. Season with salt and pepper. |
