This is an old Weight Watchers recipe before there were points, but I think it's about 4 points. Recipe source: Weight Watchers Slim ways with pasta. Ingredients:
12 ounces shrimp |
2 teaspoons olive oil |
1 tablespoon capers, rinsed and drained |
2 garlic cloves, minced |
1 cup tomato, drained and chopped |
1 teaspoon dried oregano |
1/2 teaspoon dried tarragon |
1 1/2 ounces feta cheese, crumbled |
3 ounces orzo pasta, cooked and drained |
Directions:
1. Shell and devein shrimp. 2. In a large skillet heat olive oil and then add capers and garlic; cook stirring fo r1-2 minutes. 3. Add shrimp, tomatoes, oregano and tarragon to skillet and saute for 5-6 minutes, stirring occasionally or until shrimp is pink. Remove from heat and stir in feta cheese; toss to combine. 4. Spoon shrimp mixture over the orzo; toss. |
