Pasta With Mushrooms Natalie |

Natalie was concierge at Halloran House Hotel on 48th and Lexington in Manhatten. She shared this recipe from her childhood with the Frugal Gourmet. Ingredients:
2 ounces dried mushrooms, soaked in water for 2 hours, drained and chopped |
1 medium yellow onion, peeled and chopped |
3 tablespoons olive oil |
2 teaspoons garlic, minced |
1/3 cup whipping cream |
1 teaspoon tomato paste |
salt |
pepper |
16 ounces dry pasta, cooked al dente (use your favorite) |
parmesan cheese, grated (or romano) |
Directions:
1. Saute mushrooms, onion and garlic in olive oil. When hot and flavorful, add the cream and tomato paste. Salt and pepper. Simmer for a few minutes and toss with the pasta. 2. Garnish with cheese. |
