Pasta with Kale and Mushrooms |

A variation on my friend Donald's kale recipe... Ingredients:
3 tbsp olive oil |
3 (medium) mushrooms, sliced |
1 tbsp lemon juice |
1 tbsp garlic, minced |
3 cups kale, uncooked |
3 cups rotini, uncooked |
1/2 cup tahini |
1 tsp salt |
1 tsp soy sauce |
Directions:
1. Saute mushroom slices in olive oil and add kale when mostly cooked. Add lemon juice and garlic and cooked pasta, saute for five minutes, then add salt, tahini, and soy sauce to taste. Hot sauce optional. |
