Pasta With Goat's Cheese and Walnuts |

I have not tried it yet, but sounds yummy. Ingredients:
350 g penne pasta |
125 g soft goat's cheese or 125 g cream cheese with herbs |
50 g walnuts, roughly chopped |
1 lemon, zest of |
1 bunch chives, snipped |
100 g rocket |
Directions:
1. Cook the pasta according to packet instructions. Drain, reserving 2 tbsp cooking water, and return to the pan. 2. Stir the cheese, walnuts, lemon zest, chives and reserved cooking water through the pasta. Season, mix in the rocket (the heat of the pasta should be enough to wilt it) and serve. |
