Pasta With Fresh Tomatoes |

This is a wonderful, light side dish. I love it so much I've made it as our main dish too. Fresh, quality ingredients are important to the overall outcome of this dish. Ingredients:
6 tomatoes, fresh, diced |
1 tablespoon garlic, finely chopped |
3 tablespoons extra virgin olive oil |
1/3 cup olive, coarsely chopped |
1 teaspoon lemon zest |
salt |
pepper |
1 lb orecchiette (i also use rotini) |
1/3 cup fresh basil, torn |
Directions:
1. Combine first 6 ingredients in a medium bowl and allow them to rest. 2. Cook pasta as directed on package. 3. Drain and combine pasta with tomato mixture and torn basil. 4. Serve. |
