Pasta with Fire-Roasted Vodka Sauce

Ingredients:
14 1/2 ounce(s) can diced fire-roasted tomatoes
3/4 cup(s) diced carrots
1 cup(s) diced onion
14 1/2 can(s) diced tomatoes with roasted garlic
1/4 teaspoon(s) each kosher salt and pepper
1/4 cup(s) heavy cream
6 cup(s) hot cooked penne pasta
1 tablespoon(s) olive oil
1 teaspoon(s) sugar
1 tablespoon(s) tomato paste
1/3 cup(s) vodka
1 cup(s) water
Directions:
1. In a large nonstick skillet heat oil over medium-high heat. Add onion and carrots; cook, stirring occasionally, 4 minutes or until onion is softened.
2. Add vodka and remaining ingredients except cream and pasta; bring to a boil.
3. Reduce heat and simmer, stirring occasionally, 15 minutes.
4. Add cream.
5. Serve over pasta.
