Ingredients:
14 1/2 ounce(s) can diced fire-roasted tomatoes |
3/4 cup(s) diced carrots |
1 cup(s) diced onion |
14 1/2 can(s) diced tomatoes with roasted garlic |
1/4 teaspoon(s) each kosher salt and pepper |
1/4 cup(s) heavy cream |
6 cup(s) hot cooked penne pasta |
1 tablespoon(s) olive oil |
1 teaspoon(s) sugar |
1 tablespoon(s) tomato paste |
1/3 cup(s) vodka |
1 cup(s) water |
Directions:
1. In a large nonstick skillet heat oil over medium-high heat. Add onion and carrots; cook, stirring occasionally, 4 minutes or until onion is softened. 2. Add vodka and remaining ingredients except cream and pasta; bring to a boil. 3. Reduce heat and simmer, stirring occasionally, 15 minutes. 4. Add cream. 5. Serve over pasta. |
