Pasta with Chicken & Vegetables |

A quick dinner Ingredients:
1 tbsp olive oil |
2 cups broccoli, cut in florets |
2 cups asparagus, cut in 1 in pieces |
1 med bell pepper |
6 green onions, sliced |
4 oz whole wheat pasta |
2 tbsp whipping cream |
4 tbsp grated parmesan cheese |
Directions:
1. Cook pasta in boiling water until tender 2. Heat olive oil in saute pan; add chicken, season with salt, pepper & garlic salt and cook until lightly browned and cooked through. Remove from pan. Do not wipe out pan. Add vegetables and stir fry until crisp tender, about five minutes. 3. Drain pasta, reserving about 1/4 cup of cooking water. 4. Add pasta to vegetables; stir. Add cream and cheese; stir to combine. Add pasta cooking water if too dry. 5. Serve with additional grated cheese. |
