Pasta with Cherry Tomatoes and Arugula |

Vegetarian pasta dinner. Ingredients:
1 pint cherry tomatoes, halved |
1 clove garlic, minced |
1 tsp balsamic vinegar |
1 cup arugula leaves, chopped |
1 tbsp fresh basil, chopped |
2 tbsp extra virgin olive oil |
3/4 lb fusille |
1/4 cup parmesan, grated |
Directions:
1. Combine the cherry tomatoes, garlic, balsamic vinegar, arugula, basil, and olive oil in a wide bowl. Let sit for 15 minutes. Taste and adjust seasonings. 2. Meanwhile, cook pasta. Drain and toss with the tomato mixture, sprinkle on cheese, and serve. |
