A little bit of a different twist for pesto. This is actually quite low in fat and calories!! Ingredients:
16 ounces pasta (any kind will do) |
2 large avocados, peeled and pitted |
3 cloves garlic (or more) |
3 tablespoons fresh lemon juice |
1 cup packed cilantro |
1 large tomato, peeled and chopped fine |
1/3 cup parmesan cheese, to taste |
Directions:
1. Cook pasta until al dente. 2. Combine avocado, garlic, lemon juice and cilantro in a food processor. 3. Process about 1 minute or until smooth. 4. Stir in chopped tomatoes. 5. Drain pasta and pour pesto over it tossing well. 6. Sprinkle with Parmesan cheese. |
