Pasta Salad With Summer Ale Vinaigrette |

Love Pasta Salad? Love Beer? You're gonna love this... Ingredients:
2 red bell peppers, seeded, and roasted |
2 zucchini, grilled and diced |
2 summer squash, grilled and diced |
2 red onions, quartered and grilled |
1lb. rotini pasta, cooked according to instructions |
1/2 cup olive oil |
2 1/2 tbls. cider vinegar |
1 1/2 tsp rosemary, dried |
2/3 cup summer ale (i use sam adams) |
1 tsp lemon juice |
salt and pepper to taste |
1 pinch sugar |
grated parmesan and chopped olives for garnish |
Directions:
1. In blender, put red peppers, olive oil, cider vinegar, rosemary, beer, lemon juice, salt, pepper and sugar 2. Blend until smooth 3. Add vegetables to pasta 4. Stir in vinaigrette 5. Garnish with black olives and parmesan cheese. |
