Pasta Salad With Smoked Cheese |

This quick and easy pasta salad is made with healthy olive oil and veggies. Can also be made with wheat pasta noodles. You can substitute veggies for what you have on hand. Ingredients:
8 oz. elbow noodles |
1 jar of pimentos including juice |
1/3 cup of chopped scallions |
1/2 cup of chopped brocolli florets |
4 oz. smoked cheddar cheese - cut into 1/4 inch cubes |
3 t olive oil |
1 whole lemon zest and juice |
1/2 cup chopped walnuts |
1 tsp salt |
1 tsp black pepper |
1 tsp garlic salt |
1 tsp garlic powder |
Directions:
1. Boil pasta until al dente. Place in medium sized serving bowl. 2. Fold in balance of ingredients. Taste and adjust seasoning if necessary. 3. You can substitute brocollli with any vegetable you prefer or have on hand: asparagus or green beans would be excellant subs. 4. Serve room temp or cold. Enjoy! |
