This is great for a BBQ because it can sit out in the heat and it is much healthier than using bottled dressing. Ingredients:
8 oz bowtie pasta |
6 tb olive oil |
2 tb red wine vinegar |
1 tb lemon juice |
1 clove minced garlic |
1/2 tsp salt |
1/2 tsp pepper |
fresh basil, sliced |
8 oz salami, sliced |
2 tb capers |
1 can artichoke hearts, drained and chopped |
fresh mozzarella cheese, diced |
1/2 c kalamata olives, pitted |
cherry tomatos, halved |
Directions:
1. Boil pasta 14 minutes. 2. Drain pasta and toss with dressing while still hot. 3. Whisk together oil, vinegar, lemon juice, garlic, salt, pepper, basil. 4. Refrigerate 30 minutes. 5. Add remaining ingredients. |
