Here is a pasta salad recipe from a can of diced tomatoes. Pick your favorite pasta and vegetables for variety. Prep time is the time to cook the pasta and mix the salad. Cook time is wait time in the refrigerator.
Ingredients:
8 ounces pasta of your choice (i like tricolor rotini)
14 1/2 ounce can diced tomatoes (drained, save juice for other use)
2 cups assorted chopped vegetables of your choice (onions, peppers, carrots, green onions etc--i like a little broccoli too)
1 cup italian salad dressing.
Directions:
1. Cook pasta according to package directions, drain and cool.
2. Combine pasta with all other ingredients in a large serving bowl
3. Cover and refrigerate for at least 3 hours, overnight if you wish.
