From Ingredients:
2 cups whole wheat pasta (shaped in wheels or another fun shape if possible) |
1 cup chopped fresh broccoli |
1/4 cup sliced black olives |
1/2 cup baby carrots, julienne |
1/2 cup zucchini, sliced thin |
1/2 red onion, sliced very thin |
2 tablespoons olive oil |
black pepper and lemon juice (or low-fat salad dressing) |
Directions:
1. Boil pasta al dente. 2. Sauté broccoli, carrots, zucchini in olive oil until crisp yet tender. 3. Drain & rinse pasta. 4. Combine pasta and vegetables in large bowl and add parmesan cheese to lightly coat. 5. Add black pepper and lemon juice if you wish. 6. Serve warm or cold. |
