I love a basic, straight forward pasta (spaghetti) salad. As a side dish this serves 8-10 but as a main dish I'd say more like 6. In order to make it a more well-rounded meal if serving as a main dish I would add a couple cans of white tuna (drained) or salmon, or cooked and cubed chicken breast. Ingredients:
1 12oz. box tri color rotini (6 cups cooked) |
1 cup italian dressing (i used emeril's vinaigrette) |
2 cups cucumber, peeled and chopped |
2 cups mini heirloom tomatoes, chopped |
1 cup black olives, chopped |
6 tbsp salad seasoning (mccormick or emeril's) |
1 cup shredded romano cheese |
Directions:
1. Cook pasta according to directions, allow to cool. 2. Add all ingredients to a large mixing bowl and mix well. 3. Refrigerate before serving. 4. Sprinkle with cheese when serving. |
