Kind of just figure out what is in your pantry, and toss stuff in until it looks good, or sounds good. This came from Obesity Help. I have not tried this, just posting for safe keeping. Ingredients:
2 cups of dreamfield elbow pasta noodles |
1 cup of oikos non-fat plain greek yogurt or 1 cup fage non-fat plain greek yogurt |
3 tablespoons miracle whip, lite |
1/2 ounce hidden valley ranch fiesta dip mix (1/2 of 1 packet, they make other varieties if the fiesta blend does not appeal to your tastes, also ) |
1/2-3/4 cup fresh broccoli florets, halved and rinsed thoroughly (per your preference) |
1/2 fresh carrots, julienned or 1/2 thinly sliced carrot |
1/4 cup jarred pimentos, drained and diced |
hard-boiled egg, diced |
5 -7 slices turkey bacon, cooked over medium heat until crispy, drained, then chopped into small pieces |
10 -20 turkey pepperoni, quartered |
fresh lime zest |
couple teaspoons fresh lime juice |
reduced fat sargento pepper jack cheese or reduced fat shredded sharp cheddar cheese |
Directions:
1. Cook macaroni as directed on package. Rinse with cold water until chilled. 2. Add the next 3 ingredients, mix thoroughly. Add fresh veggies, cover and chill for at least 1 hour before serving. The longer this one sits, the better the flavors taste. |
