A tasty salad for any time of the year, a favorite of my family eapecially in the summer!! Ingredients:
6 tablespoons olive oil |
3 tablespoons red wine vinegar |
2 teaspoons dried basil |
2 teaspoons dried oregano |
salt |
pepper |
1 1/2 cups orzo pasta |
1 cup tomato, chopped |
1 cup cucumber, chopped |
1/2 cup sweet red pepper, chopped |
1/2 cup yellow sweet pepper, chopped |
2/3 cup red onion, diced |
24 kalamata olives |
3/4 cup feta cheese, crumbled |
Directions:
1. In a small bowl, whisk together oil, vinegar, basil, oregano, and salt and pepper. Set aside. 2. SALAD:. 3. In a large saucepan, cook pasta in boiling salted water for about 10 minutes or until tender. Drain and rinse with cold water. Drain well and place in a large bowl. Stir in dressing. 4. Stir in tomatoes, cucumbers, red and yellow peppers, onions and olives. Cover and let stand until serving. Refrigerate if longer than 1 hour. Top with feta cheese. |
