Pasta Puttanesca With a Little Smoke! |

This dish was said to be made for the ladies of the Roman evenings. A plate of this dish got them happy enough to perk them up and away they went. It is fast, delicious and filling. Ingredients:
2 garlic cloves, sliced |
2 chilies |
2 tablespoons olive oil |
2 anchovies, rinsed |
4 tomatoes, chopped |
1/2 cup white wine |
1/4 cup black olives, pitted |
2 tablespoons capers |
1 cup artichoke heart, quartered |
4 tablespoons chopped fresh parsley |
2 tablespoons grated parmigiano-reggiano cheese |
1 tablespoon chipotle chili pepper flakes |
Directions:
1. In a large pot heat the water to a boil with a little salt, so it is ready to make the pasta. 2. In a frying pan sauté the garlic and chilies in the olive oil for 1 minute, then add the anchovies and tomatoes. Cook for 1 minute. Add the wine and simmer for 3-4 minutes, add the olives, capers and artichokes stirring for 1-2 minutes. Add the parsley and remove from the heat. 3. Add pasta to the boiling water and cook to your desired texture, 7-9 minutes for dried pasta. Drain and add to the sauce.Stir around to coat the pasta with the sauce cook for 2 minutes. Serve with Parmigiano a top. Season with salt, pepper and chipotle flakes to your taste. |
