This is a great pantry meal after a long day. But it is also super salty and spicy and rewarding! Ingredients:
2 tablespoon olive oil |
1 tablespoon anchovy paste |
3 cloves garlic, minced |
1 tablespoon red pepper flakes |
1 can whole tomatoes |
1 can crushed tomatoes |
1/4 cup flat leaf parsley, chopped |
1 dozen kalamata olives, pitted and chopped |
3 tablespoon capers |
freshly ground pepper |
parmesan, for garnish |
Directions:
1. Over medium heat cook the garlic, chillies and anchovy paste in the oil. Stir it around until the paste dissolves and garlic is tender - about 3 minutes. 2. Add the tomatoes, olives, capers, parsley and pepper and cook for about 10 minutes. 3. Toss with pasta and garnish with parmesan cheese. |
