My recipe for pasta,potato salad combo, I used to make for my kids, parties, potluck etc. A nice change and extremely tasty rendition Ingredients:
1 cup elbow macaroni cooked |
2 large redskinned potatoes, unpeeled, cubed and cooked |
1 carrot coarsely shredded |
2 tbs. minced red onion |
1 stalk celery fine diced |
1 cup of mayonasise or enough to bind |
salt and pepper to taste |
variations |
tuna/seafood |
add 2 cans albacore tuna/seafood drained |
turkey/chicken |
add 2 cups diced cooked poultry |
other options |
1/2 cup cooked green peas |
fresh chopped parsley or herbs to taste |
chopped dried cranberries esp with the chicken |
Directions:
1. Make basic pata potato salad and add variations as you like. 2. Makes a large bowl serving 8 to 10. 3. The pasta and potato combination is very delicious. 4. A nice change from basic macaroni or potato salad! |
