Very unique and gourmet,but easy and cheap Ingredients:
8 oz. dried orzo pasta |
8 oz. ripe cherry tomatoes,quartered |
pesto dressing |
about1/4 cup pine nuts,lightly toasted |
fresh basil sprigs |
about 1 cup fresh basil leaves |
2 garlic cloves,peeled |
about1/4 cup of pine nuts |
3 tablesspoons xtr-virgin olive oil |
1/4 cup freshly grated good parmeson cheese |
3 tblsp. of half & half |
Directions:
1. Cook pasta as directions indicate,tender but firm 2. Drain,rinse with cold water,drain again. 3. In a bowl,put orzo and add the tomatoes. 4. PESTO DRESSING: 5. Combine basil leaves,garlic,pine nuts,and oil in a blender. 6. Process till smooth. 7. Turn into a bowl and beat in cheese and the half&half. 8. Stir dressing into pasta mixture. 9. Transfer into a serving dish and sprinkle with the toasted pine nuts. 10. garnish with Basil sprigs. |
