Pasta in Tomato Cream Sauce |

This is such a great comfort food. Easy enough for a week-night, yet good enough for a special occasion. Ingredients:
8 ounces penne or 8 ounces elbow macaroni |
1 (14 1/2 ounce) can diced tomatoes with onion and garlic |
1/2 cup chopped fresh basil or 1 teaspoon dried basil |
3/4 cup whipping cream |
1/3 cup parmesan cheese |
Directions:
1. Cook pasta according to package directions; drain and keep warm. 2. Meanwhile, in skillet, cook tomatoes over medium high heat until thickened, about 5 minutes. 3. Reduce heat to low; wait a few minutes and then add basil and cream. 4. Heat through. 5. DO NOT BOIL. 6. Toss with pasta and and cheese. 7. Serve immediately. |
