Pasta (Gnocchi) with Greens, Peppers & Goat Cheese |

Use gnocchi. But Calorie count doesn't know about gnocchi! Ingredients:
3 tablespoons olive oil |
1/4 cup onion, finely chopped |
2 cloves garlic, finely chopped |
1 cup red bell pepper, finely chopped |
4 cups greens, loosely chopped |
1/4 cup fresh basil, chopped |
8 oz pasta, cooked according to package directions |
4 ounces goat cheese, cut into pieces |
Directions:
1. Heat a large skillet over high heat and add olive oil. When the oil is hot, add the onions, garlic and peppers and saute about 3 minutes or until the vegetables begin to soften. Add the greens a handful at a time, stirring after each addition. Turn heat to low and let the greens cook, stirring occasionally, about 7 minutes or until the greens are wilted. 2. Fold in the basil and the gnocchi, stirring gently to make sure that the gnocchi is evenly coated with the oil and is mixed well into the vegetable mixture, but so it doesn't break apart. 3. Distribute the goat cheese on top and stir into the mixture until it begins to melt. 4. Makes 3 servings, or more as a side dish. |
