How much do you want to bet you won't be able to eat just one? From my collection, Good Housekeeping 1994. Ingredients:
1/4 16 oz. package capellini or spaghettini, cooked |
salad oil |
3 green onions, finely chopped |
1/4 all-purpose flour |
2 tbl. grated parmesan cheese |
1/2 tsp. salt |
1/4 tsp. ground black pepper |
1 large egg |
water |
Directions:
1. Coarsely chop cooked capellini; set aside. 2. In small saucepan over medium heat, in 1 Tbl. hot salad oil, cook green onions, stirring occasionally, until tender and golden. 3. In medium bowl, with wire whisk or fork, mix flour, parmesan cheese, salt, pepper, egg, and 1/4 C water; stir in green onions and capellini until well coated. 4. In 12-inch non-stick skillet over medium-high heat, 2 Tbl. salad oil until very hot. Into hot oil, drop mixture by scant 1/4 C into 4 mounds, about 2 inches apart. With pancake turner, flatten until golden brown on both sides. Remove to paper towels to drain; keep warm. 5. Repeat with remaining fritter mixture. |
