Ingredients:
2 tablespoons olive oil |
1 cup chopped onion |
2 cloves garlic, minced |
1 (15 ounce) can red kidney beans, drained & rinsed |
1 (8 ounce) can tomato sauce |
1 cup vegetable broth |
2 cups water |
1 teaspoon dried parsley |
1 teaspoon dried basil |
1 teaspoon dried oregano |
1 -1 1/2 teaspoon dried thyme, crushed |
1/4 teaspoon pepper |
1 cup small cooked pasta |
grated italian cheese (your choice) |
Directions:
1. In a large pot saute onion & garlic in oil until soft. 2. Add beans, tomato sauce,veggie broth & water. 3. Stir. 4. Add spices. 5. Stir. 6. Bring to a boil,then lower to a simmer. 7. Simmer about 1 hour. |
