Ingredients:
2 tablespoons olive oil
1 cup chopped onion
2 cloves garlic, minced
1 (15 ounce) can red kidney beans, drained & rinsed
1 (8 ounce) can tomato sauce
1 cup vegetable broth
2 cups water
1 teaspoon dried parsley
1 teaspoon dried basil
1 teaspoon dried oregano
1 -1 1/2 teaspoon dried thyme, crushed
1/4 teaspoon pepper
1 cup small cooked pasta
grated italian cheese (your choice)
Directions:
1. In a large pot saute onion & garlic in oil until soft.
2. Add beans, tomato sauce,veggie broth & water.
3. Stir.
4. Add spices.
5. Stir.
6. Bring to a boil,then lower to a simmer.
7. Simmer about 1 hour.
