This is the authentic Italian version of this dish as per my Nonna Theresa. It was my go to comfort food growing up and I still love it at 65! Be sure to use the liquid that comes with the peas or it won't be the same. Enjoy! Ingredients:
1 (15 ounce) can peas, with liquid (i use libby's) |
1 medium onion, diced |
2 tablespoons olive oil |
1/4 teaspoon garlic powder (not salt!) |
1/4 teaspoon black pepper |
1 teaspoon salt |
8 -12 ounces ditalini (you could also use elbows) |
Directions:
1. Saute onion in oil until transparent. 2. Add peas, liquid and seasonings and simmer for 5 minute. 3. Meanwhile, cook pasta in 4 qts salted water until al dente and drain. 4. Add pasta to pea mixture and mix well. Sprinkle with some grated Parmesian if desired. 5. ENJOY! |
