From Susan at stickygooeycreamychewy, this is an easy AND hearty soup for a cold winter's evening... Ingredients:
1 pound ditalini pasta |
2 tablespoons olive oil |
1 medium onion, diced |
3 cloves garlic, minced |
3 cups marinara sauce |
1 cup water |
2 can cannellini beans, rinsed and drained |
grated parmesan cheese |
fresh parsley for garnish |
Directions:
1. Put a large pot of salted water on stove to boil. 2. When boiling, cook ditalini until al dente, about 10 minutes. 3. Drain and set aside. 4. In another large pot heat olive oil and saute onion over medium heat until soft. 5. Add garlic and saute a few seconds more. 6. Add marinara sauce and water and simmer about 10 minutes. 7. Add beans and continue to simmer until heated through. 8. Add pasta and mix well. 9. If sauce is too thick, add a little water to thin it. 10. Serve in a large bowl with grated and parsley garnish. |
