Classic Pasta and beans. Use a small, tubular pasta such as ditalini or elbows. The cayenne pepper is essential. Ingredients:
8 ounces pasta |
2 cups kidney beans, white, cannelini |
4 tbs tomato paste |
6 cups water |
1/2 tsp salt |
4 cloves garlic |
2 tbs olive oil |
1/8 tsp cayenne pepper |
Directions:
1. Bring the water to a full rolling boil and add the salt. 2. Drop the pasta into the water keeping it boiling 3. Cook until the pasta is firm, still a little hard inside 4. Meanwhile, in a small saute pan, cook the garlic in the olive oil just until it's soft. Be careful not to scorch it. 5. Add the tomato paste, beans and a small ladle of the liquid that pasta is cooking in. Stir and simmer for a minute or two. Add the cayenne pepper 6. Add the tomato mixture to the pot of boiling pasta. 7. Reduce the heat to a simmer and cook for about 10 minutes. 8. Serve as a soup or stew with bread. |
