I love this soup! I adapted this recipe because it's just my husband and I so I made it smaller than most recipes for this soup. Ingredients:
1/2 lb ground beef |
1/2 small onion, chopped |
1 carrot, chopped |
1 garlic clove, minced |
1 (14 1/2 ounce) can diced tomatoes |
1 (15 ounce) can cannellini beans |
1 1/2-2 cups chicken stock |
3/4 teaspoon salt |
1/2 teaspoon oregano |
1/2 teaspoon basil |
1/4 teaspoon black pepper |
1/4 teaspoon thyme |
1/2 cup small shell pasta |
Directions:
1. Brown & drain ground beef. 2. Add onion & carrot, cook for about 3 minutes. 3. Add garlic & spices; mix thoroughly. 4. Add tomatoes, chicken stock, & beans. 5. Simmer for 20 minutes. 6. Add uncooked pasta & cook for another 10-12 minutes. |
