This is a new pasta salad that I created for our Memorial Day picnic. My objective was to prepare something that the grandkids would enjoy, so this sweet pasta salad evolved. Rather than make a dressing for it, I thought that Marzetti's Slaw Dressing would give it just the right balance of sweetness and tanginess. I hope you'll try it, and let me know your opinions. Ingredients:
4 cups elbow macaroni, al dente |
4 cups peeled & diced potatoes, al dente |
2 cups diced carrots, al dente |
6 hard-boiled eggs, chopped |
1 lb imitation crabmeat, cut into bite sized pieces |
1 (12 ounce) jar sweet gherkins, sliced about 1/8-inch |
1.5 (15 ounce) jars marzetti's coleslaw dressing |
1 teaspoon sea salt |
1/2 teaspoon fresh ground pepper |
Directions:
1. Mix all ingredients together in large storage container. 2. Refrigerate at least 4 hours prior to serving, stirring frequently. 3. Serve in a pretty cut glass bowl. |
