I grew up in the south with a mainstay dish there called macaroni and tomatoes. I love it. Sometimes they would add fresh crisp fried bacon to the final dish. I never expected to see a likeness of this on any menu till I went to Vegas. Lo and behold said tomatoes con chili verde-oh my! They had my favorite food, done with one exception-chipotle powder and chili. I was amazed. I still prefer my old standby, but thought it interesting enough to post. Who ever knew an old poor person recipe from the south would be on the Vegas strip? Ingredients:
1 cup macaroni, boiled about 10 mins till done and drained |
4 cups whole tomatoes, crushed with hands |
1 (4 ounce) can diced green chilies |
Directions:
1. Cook macaroni. 2. Drain. 3. Add tomatoes spice, chili (salt and pepper to taste.) You can add dash of chipotle powder and also fresh fried bacon, although on Vegas strip they added no bacon. |
