This is a light, fulfilling pasta salad - very good, fairly addictive!!
Ingredients:
1 lb boneless skinless chicken breast
1 (8 ounce) package bacon
1 (24 ounce) package wagon wheel macaroni
1 cup mayonnaise
1 tablespoon white wine vinegar
1 tablespoon lemon juice
salt & pepper
lettuce (optional)
tomato (optional)
swiss cheese (optional)
Directions:
1. Cook chicken and set aside.
2. Cook bacon to a crisp, let cool then crumble.
3. Boil pasta, drain and rinse in cold water.
4. mix mayonnaise, vinegar& lemon juice.
5. Stir into pasta.
6. Add chicken& bacon.
7. Refrigerate at least 2 hours for flavors to mix.
8. Serve over lettuce and tomato.
9. Top with shredded swiss cheese, salt& pepper to taste.
