Very simple, light pasta dish Ingredients:
2 cups whole wheat penne |
14 ounces fresh mozzarella cheese, cut into 1/2 inch cubes |
5 tomatoes, cored and roughly chopped |
1/2 cup olive oil |
1 tablespoon cayenne pepper |
1/2 teaspoon salt |
1/3 cup fresh basil |
Directions:
1. Mix the mozzarella, olive oil, chopped tomatoes, pepper and salt. 2. Cook pasta according to directions. 3. Mix sauce and pasta. Add fresh basil. Serve. |
