From Cook's Illustrated (1/2 recipe) Ingredients:
1/6 cup extra-virgin olive oil |
2 tsp lemon juice |
2 tbsp shallot, diced |
1/4 tsp salt |
1/8 tsp pepper |
1 pound tomatoes, diced |
4 oz fresh mozzarella cheese, cubed |
4 oz barilla plus elbows |
4 basil leaves (2g) |
Directions:
1. Whisk oil, lemon, shallot, salt and pepper in large bowl 2. Add tomatoes and fresh mozzarella and gently toss to combine; set aside. Do not marinate for longer than 45 minutes. 3. Cook pasta to al dente, drain well. 4. Add pasta to tomato mixture and gently toss. Let stand 5 minutes. Stir in basil and adjust seasoning if needed. |
