Pasta Bows With Tuna, Olives & Capers |

This delicious pasta recipe makes a quick and simple supper. Ingredients:
14 ounces bow tie pasta |
6 tablespoons extra virgin olive oil |
2 garlic cloves, crushed |
14 ounces tuna in brine, drained |
3 ounces pitted olives, halved |
2 tablespoons capers, rinsed |
2 ounces flat leaf parsley, roughly chopped |
salt and pepper |
Directions:
1. Cook pasta following pack instructions. Drain, reserving a few tablespoons of water in the bottom of the pan. 2. Return the pasta to the pan over a low heat, stir in the olive oil and garlic and allow to infuse for 1 minute Toss through the remaining ingredients, season and serve. |
