pasta salad with peanut butter dressing and lots of fresh veggies. From Jane Brody's Good Food book. Ingredients:
1/2 c smooth peanut butter (natural) |
2 tbsp reduced sodium soy sauce |
2 tbsp fresh lemon juice |
1 tbsp hot water |
1 tsp red pepper flakes |
1/4 tsp cumin |
1/8 tsp turmeric |
1 lb penne pasta |
1 salt, if desired |
1 tbsp oil |
1/2 lb green beans, blanched and cut into 1/2 in pieces |
2 large carrots, halved lengthwise and sliced thin crosswise |
2 cucumbers,quartered lengthwise, seeded, and sliced thin crosswise |
8 scallions, with green tops, sliced into 1/4 in pieces |
Directions:
1. Cook pasta (with salt and oil added to the water) and rinse in cold water. Toss with vegetables. 2. Combine remaining ingredients (peanut butter through turmeric) in a small bowl. 3. When ready to serve, toss salad and dressing, and if desired, sprinkle peanuts over salad. |
