Pasta and Black Bean Salad With Roasted Red Pepper Dressing |

Looking for a new twist on pasta salad? Here is an enjoyable one that I received at my bridal shower. Ingredients:
1/2 cup roasted red pepper |
1/4 cup olive oil |
2 tablespoons red wine vinegar |
2 tablespoons lemon juice |
1 tablespoon fresh oregano |
1 tablespoon fresh rosemary |
1 tablespoon fresh parsley |
1 tablespoon fresh cilantro |
salt and pepper, to taste |
4 cups shaped pasta, cooked, drained, and rinsed in cold water (i.e. penne or fusilli) |
1 (15 ounce) can black beans, rinsed and drained |
Directions:
1. Combine roasted red peppers, olive oil, vinegar, lemon juice, and all herbs in the blender or food processor and process until well blended into a smooth dressing. 2. Add salt and pepper to taste. 3. Toss sauce with pasta and black beans. 4. Refrigerate until ready to serve. |
