Passover Sweet Potato and Prune Casserole |

Can make this anytime. Ingredients:
6 medium sweet potatoes |
1 (1 lb) jar stewed prune, drain, reserve |
2 tablespoons prune juice |
3/4 cup honey |
3/4 teaspoon cinnamon |
1 teaspoon salt |
2 tablespoons prune juice |
2 tablespoons lemon juice |
1/4 cup margarine, melted |
Directions:
1. Cook potatoes until tender. 2. Peel & cut into 1/4 thick slices. 3. Cut prunes in 1/2 & remove pits. 4. Combine honey, cinnamon, salt, juices, & melted margarine. 5. In a casserole arrange alternate layers of potatoes & prunes; pour some honey mixture over each layer. 6. Bake uncovered at 350 degrees F. for 45 minutes, basting occasionally. |
