Passover Miniature Potato Kugel |

This is a second recipe I found at my great aunt's which I'm posting here for safe keeping. Ingredients:
2 cups raw potatoes (grated) |
1 large carrot (grated) |
1/4 cup matzo meal |
salt |
pepper |
1 medium onion (grated) |
1/4 cup oil |
2 eggs |
Directions:
1. Preheat oven to 350. 2. Peel veggies and grate. 3. Mix together potatoes, onions, carrots, matzah meal, salt and pepper. 4. Beat eggs and oil together. 5. Stir into potatoto mixture. 6. Pour into well greased muffin tins. 7. Bake for 1 hour or until edges are browned and crisp. |
