Passover Fried Green Tomatoes |

Source: adapted from newspaper recipe: Culinary Tales of the Jewish South by Marcie Cohen Ferris . Use flour if not making for Passover Ingredients:
1/2 cup matzah meal |
1 tsp kosher salt |
1/2 tsp pepper |
1/8 tsp sugar |
2 large eggs |
4 to 5 large green tomatoes ( about 2 lbs ) |
1/2 cup oil to fry |
Directions:
1. In a pie plate mix the dry ingredients. 2. In another plate fork mix eggs. 3. One at a time dip 1/2 inch thick cored sliced tomatoes into eggs, then matzah meal, pressing meal into surface of tomatoes . 4. In a heavy skillet heat oil and fry tomatoes, turning only once until golden brown. 5. Drain on paper towels. 6. Add additional oil if needed 7. Yield: 4 to 6 serving |
