Passover Apple Cranberry Cake Dessert |

What I did was take a favorite jewish apple cake recipe and omit the flour and baking powder. What resulted was a delcious, moist dessert. Able to cut when chilled but very soft like pudding dessert like. I hope you enjoy, photo forthcoming Ingredients:
5 large apples peeled and slice |
some oil or butter |
1 cup dried cranberries |
2 tbs sugar or to taste |
2 tsp cinnamon or to taste |
juice from one lemon |
cake |
3 cups matzah cake meal or as needed |
2 cups sugar |
1 cup oil |
3 eggs |
2 tsp vanilla |
1/4 cup orange juice ( or cranberry juice ) |
topping (optional ) |
more sugar cinnamon, nutmeg |
pecans |
Directions:
1. Make the cooked filling by sauteing the apples until soft but not mushy 2. Combine the sugar, cinnamon and stir into apples with lemon juice 3. Sweeten as desired 4. Let cool 5. The cake batter: 6. Beat together the oil, eggs and sugar 7. Add vanilla and juice 8. Stir in the cake meal to mack a thick spreadable batter 9. Spread the batter into a greased large 9x 13 or 10 x 14 baking pan 10. Add on the cooked fruit filling evenly 11. Sprinkle with more sugar and cinnamon, nutmeg or chopped pecans if desired 12. Bake in a 375 until cake tersts done may be 45 to 90 minutes 13. A toothpick in center will have no wet crumbs. 14. Cool completely 15. After cooling chill cake for easier slicing 16. Cut into sqaures and top with a dollop of whipped cream or ice cream 17. The texture should be a across between a cake, pudding ,cobbler dessert because the batter has no baking powder or leavening and it becomes spongelike absorbing any juices etc form the apples 18.
