This recipe is from Australia Women's Weekly. Can be topped with a cream cheese icing. Yummy! Ingredients:
30 g butter, softened |
1/2 cup caster sugar |
2 eggs |
1 cup self-raising flour |
1/4 cup passion fruit pulp |
Directions:
1. Preheat oven to moderate (180C/160C fan-forced). 2. Line 12-hole standard muffin pan with paper cases. 3. Beat butter, sugar, eggs and flour in small bowl with electric mixer on low speed until ingredients are just combined. 4. Increase speed to medium, beat until mixture is changed to a paler colour. 5. Stir in passionfruit pulp. 6. Divide mixture among cases, smooth surface. 7. Bake cakes about 20 minutes. 8. Turn cakes onto wire rack to cool. |
