Created by Hawaiian chef Roy Yamaguchi. Adapted from Barbecue USA. Ingredients:
3 lbs apples, peeled, cored and quartered (your choice of variety) |
1/3 cup passion fruit juice, strained (or nectar) |
1/2 vanilla bean, split |
2 slices ginger, 1/4-inch, gently crushed |
1/2 cup mirin |
3 tablespoons honey (or to taste) |
Directions:
1. Place all ingredients in a heavy non-reactive saucepan over medium heat. 2. Cover and cook until apples are very soft, 10-15 minutes. Reduce temperature if apples start to boil over. 3. Remove from heat and take out ginger and vanilla bean. 4. Place apple mixture in food processor and puree into a smooth sauce. |
