The crystallised rose petals are a frill - and the roses are used from my garden . This beautiful two layer affair cake is so moist , glammed up with bananas with cream cheese frosting in between . Ingredients:
2 bananas , very ripe - mashed |
227 g tin pineapple , drained and chopped |
200 ml groundnut oil |
250 g brown caster sugar. |
3 med egg yolks and whites |
3 tbsp milk |
100 g chopped pecan nuts / walnuts |
200 g flour , 2 tsp baking pwd , 3/4 tsp ginger and cinnamon - sifted |
180 g butter |
150 g sifted icing sugar ...... cream it |
350 g cream cheese |
1 tsp vanilla |
apple green colour |
Directions:
1. Pre heat oven at 190 deg C . 2. Butter two 20 cm cake pan . 3. Beat the egg whites until stiff . Set aside . 4. Whisk the bananas and pineapple to combine . 5. Whisk in the oil and the sugar. 6. Whisk in 3 yolks and milk . 7. Fold in the nuts and the dry ing. 8. Whisk in the egg whites . 9. Bake 40 mins until its springy on top when you touch . 10. Cool . 11. ................................ 12. Cream the butter and the sugar . 13. Add the cream cheese and the vanilla in . 14. Do filling and frosting . 15.
