This chunky spread is a tasty treat for a party or any event featuring finger food, confirms Martha Reese from Highland, North Carolina. Ingredients:
3/4 cup shredded carrot |
1/4 cup chopped seeded cucumber |
1/4 cup chopped celery |
1/4 cup chopped green pepper |
1/4 cup finely chopped onion |
1 package (8 ounces) fat-free cream cheese |
2 tablespoons reduced-fat mayonnaise |
1 tablespoon lemon juice |
1/4 teaspoon salt |
1/8 teaspoon pepper |
snack rye bread |
Directions:
1. In a small bowl, combine the carrot, cucumber, celery, green pepper and onion. Drain on paper towels for 30 minutes. 2. In a large bowl, combine the cream cheese, mayonnaise, lemon juice, salt and pepper. Stir in vegetables. Cover and refrigerate for at least 2 hours. Serve on bread. Yield: 1-3/4 cups. |
