Ingredients:
1/2 cup chopped onion |
1 1/2 teaspoons butter or margarine |
1/2 pound sliced bacon |
1/2 cup (2 ounces) shredded swiss cheese |
4 eggs, beaten |
1 cup pancake mix |
1/2 cup half-and-half |
1/4 teaspoon salt |
1/8 teaspoon pepper |
Directions:
1. Sauté onion in butter in a small skillet until tender, and set aside. 2. Cook bacon in a large skillet until crisp; drain bacon on paper towels. Crumble and set aside; discard drippings. 3. Combine onion, bacon, and cheese; sprinkle mixture evenly among 3 greased miniature muffin pans. 4. Combine eggs, pancake mix, half-and-half, salt, and pepper; stir well. Pour mixture evenly into prepared muffin pans, filling two-thirds full. Bake at 400° for 15 minutes or until tops of quiches are lightly browned. Remove from muffin pans; cool 5 minutes on wire racks. |
